We’ve had years of practice since we opened our first Bertucci’s in 1981. Homemade dough, a wood-fired brick oven and fresh ingredients make for one tasty pie. It made us wonder what other things we could make in a brick oven. Fresh roasted vegetables, tender slow roasted meats, even a great burger. We became obsessed with the idea. Why couldn’t we have a restaurant where everything comes out of the brick oven? We don’t think we need anything else to put out great tasting pizzas and delicious oven roasted plates.
